And while we can’t believe that it’s nearly 2024, we are excited to share our last recipe of the year with you all. It’s the perfect dish for both adults and children and makes a great family dinner on cold winter nights. So without further ado, this December we give you this delicious pork dish, packed full of flavour with a morish creamy garlic and mushroom sauce.

 We decided not to go for a traditionally festive recipe this year as we’ve already shared our favourite Christmas Turkey recipe for December, as well as a delicious plant-based nut roast option for vegans. Instead, this month we’re going for a pork recipe complemented by a rich sauce that adds mouthwatering flavours and creamy allure. The sauce can be adjusted to taste and is a firm family favourite that is enjoyed by kids and adults alike. The perfect dinner for cold winters nights, it is also quick and easy to make, needing only around 30 minutes in total from start to finish.

Pork can be an excellent addition to a healthy diet. As a lean meat, pork is both high in protein and relatively low in fat depending on the cut. In fact, it is one of the richest and most complete dietary sources of protein and contains all nine of the essential amino acids needed for the body to grow, develop and build or repair muscle. This meat is also rich in many vitamins and minerals, including thiamine, zinc, Vitamin B12, Vitamin B6, niacin, phosphorus, and iron. Moreover, pork contains bioactive meat compounds such as creatine, taurine, and glutathione, that benefit the body in various ways including supporting heart and muscle health.

Mushrooms bring an abundance of nutritional benefits to the table. They serve as rich sources of vital B vitamins, such as riboflavin (B2) and niacin (B3), crucial for fuelling energy metabolism and enhancing overall vitality. Furthermore, mushrooms offer a generous supply of essential minerals, including selenium—a potent antioxidant bolstering immune defences, and potassium—an essential mineral for regulating healthy blood pressure levels. These incredible fungi also stand out as one of the rare non-animal sources of vitamin D, a key player in promoting and maintaining robust bone health.

INGREDIENTS

METHOD

  1. First, season the pork chops on both sides with the paprika, salt, and pepper..
  2. While the meat is marinading, heat a large pan to medium-high, then melt 2 tbsp of the butter in the pan and sear the pork chops for 2-4 minutes on both side, or until golden brown and cooked through. Once done, remove from the pan and set aside.
  3. In the same pan, melt the remaining butter over medium heat, then cook the mushrooms for around 5 minutes, or until excess moisture has reduced and they are a lightly golden brown colour.
  4. Next, stir in the crushed garlic cloves and mustard, and cook for around 1 minute, until aromatic.
  5. Now, add the flour to the pan, stirring thoroughly to make sure there are no lumps.
  6. Slowly add the 2 cups of broths, stirring often to make sure the sauce is mixed well, and the consistency is even. Season with salt and pepper to taste, then reduce the heat, and cook for around 5 minutes or until the sauce thickens, stirring often.
  7. Before returning the pork chops to the pan, check the flavour and season accordingly, then reintroduce the meat and cook together until the chops are heated through.
  8. Garnish with fresh parsley, chives, or thyme leaves and serve immediately alongside a side of steamed vegetables or mashed potatoes.
