INGREDIENTS

 METHOD

  1. First of all, fill a large pot with salted water, bring to the boil then cook the pasta for around 6-7 minutes or until very al dente, 7 minutes.
  2. While the pasta is cooking, chop the asparagus into 1-2 inch long pieces, before adding to the pasta water and cooking all together for an additional 1 minute.
  3. Next, add the peas to the pot with the pasta and asparagus, and continue to cook for around a minute more, or until cooked through.
  4. Now drain the water from the pot, reserving 1/2 cup of the liquid. Then transfer the pasta and vegetables into a large bowl.
  5. Mix in the butter, 1tbsp of lemon zest, 3 tbsp of lemon juice, 1/2 cup sour cream, and salt and pepper to taste. The stir well adding in the reserved pasta cooking water as needed until everything is coated in a smooth sauce.
  6. Serve in a bowl and top with the smoked salmon cut into strips and garnish with fresh basil and ground pepper.
