INGREDIENTS

METHOD

  1. Begin by finely slicing the onions and chopping the potatoes into small cubes.
  2. Next, heat up a saucepan to medium heat. Add a generous lug of olive oil or butter, then mix in the onions and sauté them with garlic until lightly golden.
  3. Now, add in the chopped potatoes, salt and pepper and stir for two minutes until coated, then add in the broth and bring to the boil.
  4. Once boiled, turn down the heat to a gentle simmer and cook for 20-30 minutes or until the potatoes are soft and cooked through. Gradually add water if needed.
  5. When the potatoes are cooked, turn off the heat, add in the cream and blend until smooth and creamy without any lumps.
