Vinification methods: Grapes are manually harvested in boxes of 20Kg; the grapes came from specific vineyard called «Antica Chiusina»; fermentation and maceration takes place in stainless steel tanks for 20 days at controlled temperature (24-28 C) with daily pumping and delastage; a the end of alcoholic fermenation, maceration period continued for about 48 hours; after the racking, wines are immediately transferred into french oak barrels, where malolatic fermentation will be carryed out . The racking will proceed for 12 months followed by bottle ageing.
